We transform the granular texture of canned deviled ham into a refined pâté by suspending it in a matrix of aerated fat. The addition of cream cheese stabilizes the emulsion, while unsalted butter provides the structural “set” once chilled. A splash of Cognac introduces volatile aromatic compounds that cut through the density of the cured meat. Teaching Idea: Mechanical Emulsification. High-speed shearing (food processor) forces fat globules to disperse evenly into the protein structure, creating a texture that is creamy rather than greasy.
Ingredients
The Base
- 92 g (1 can) Deviled Ham (3.25 oz standard tin)
- 45 g (3 tbsp) Unsalted Butter, softened
- 45 g (3 tbsp) Cream Cheese, softened
The Aromatics
- 15 ml (1 tbsp) Cognac, Brandy, or Bourbon
- 5 ml (1 tsp) Fresh Lemon Juice
- 1 g (½ tsp) Pink Peppercorns, crushed (or Freshly Cracked Black Pepper)
- 1 g (¼ tsp) Fresh Thyme leaves

- Pickled Mustard Seeds or Cornichons

Mise en Place (Action Checklist)
- Temper the Fats: Ensure butter and cream cheese are completely soft (room temperature, 70°F/21°C).
- Macerate the Garnish: If using shallots, soak them in vinegar briefly to remove their sulfurous bite.
- Chill the Mold: Place your serving ramekin or jar in the freezer for 10 minutes.
Method
Phase 1: The Base Emulsion
Place the deviled ham, softened butter, and softened cream cheese into the bowl of a small food processor. Process on high speed for 45–60 seconds. Stop to scrape down the sides of the bowl.
Sensory Cue: The mixture should transition from a dark pink, granular paste to a pale pink, glossy cream.
Phase 2: Flavor Integration
Add the Cognac, lemon juice, crushed peppercorns, and thyme leaves to the processor. Pulse 5–6 times just to incorporate.
Why: Adding the acid and alcohol after the initial emulsion is established prevents the fats from “breaking” or curdling.
Phase 3: The Set
Transfer the mousse into the chilled ramekin or jar. Tap the bottom of the container firmly against the counter to remove air pockets. Smooth the top with an offset spatula. Cover directly with plastic wrap (touching the surface) to prevent oxidation. Refrigerate for at least 2 hours.
Why: The butter needs time to recrystallize, changing the texture from a dip to a spreadable pâté.
Phase 4: Service
Remove from the refrigerator 15 minutes before serving to allow the fats to soften slightly (tempering). Serve with warm toast and acidic pickles.
Chef’s Notes
Texture Modification: For an even smoother “fine dining” texture, pass the mixture through a fine-mesh sieve (tamis) after Phase 2. This removes any remaining fibrous bits from the cured ham.
Alcohol Substitute: If avoiding alcohol, substitute the Cognac with an equal amount of heavy cream mixed with a drop of Worcestershire sauce.
