Headnote

This preparation represents a mechanical extraction of chlorophyll and fat-soluble aromatics rather than a standard infusion. By rupturing cell walls into a neutral carrier oil, we achieve a vibrant visual impact suitable for high-level plating. Teaching Idea: Blanching the herbs deactivates polyphenol oxidase, the enzyme responsible for enzymatic browning, ensuring the oil maintains its bright pigment for extended storage.


Ingredients

Herb Component

  • 75 g (2.5 cups) flat-leaf parsley, leaves only
  • 75 g (1.5 cups) chives, roughly chopped

Oil Component

  • 300 ml (1.25 cups) grapeseed oil or neutral canola oil

Mise en Place

  • Prepare a large pot of boiling water seasoned with Diamond Crystal Kosher Salt and a corresponding ice bath (50% ice, 50% water).
  • Set up a high-speed blender.
  • Line a sieve with a coffee filter and set over a clean deli container.
  • Weigh the oil and herbs according to metric specifications.

Method

Phase 1: Thermal Shock.

Plunge the parsley and chives into the boiling water for exactly 15 seconds. Immediately transfer to the ice bath to halt the cooking process.

Why: This short exposure deactivates browning enzymes and sets the chlorophyll without degrading volatile flavor compounds.

Phase 2: Dehydration.

Once cold, remove herbs from the ice bath and squeeze firmly with a clean towel to remove all possible moisture. Rough chop the resulting herb “puck.”

Why: Water is the primary enemy of this preparation; excess moisture promotes bacterial growth and prevents a clear final product.

Phase 3: Mechanical Extraction.

Combine the blanched herbs and the oil in the blender and process on high for 3–5 minutes.

Sensory Cue: Monitor friction heat; stop when the canister feels hot to the touch (approx. 140°F/60°C) or steam begins to appear.

Why: Controlled heat helps rupture the final cell walls, allowing the oil to dissolve the maximum amount of pigment.

Phase 4: Gravity Clarification.

Pour the mixture into the prepared filter setup. Transfer to the refrigerator and allow to drain for 12 hours. Do not press or squeeze the solids.

Why: Gravity ensures a clear oil while trapping fibrous solids; pressing would force particles through and result in cloudiness.
