Headnote

This document is the production reference for every shell we serve — from a ganache cup to a frangipane tart. All seven variant formulas share the same production logic: one base formula, seven modification sets, and three mixing methods that converge at the same chill-and-roll step. Master this framework and you can match dough structure to filling weight, shaping technique, and moisture environment without consulting separate recipes.

Teaching Idea: The Fat Encapsulation Spectrum. Every variant in this document manipulates gluten development by adjusting how fat is distributed relative to flour. The Sanding Method coats individual flour particles in fat before any moisture is introduced, physically blocking gluten formation and producing a short, crumbly texture. The Creaming Method disperses fat and sugar into a homogenized emulsion first, trapping air and producing a tender snap. The ratio of fat-to-flour, the presence or absence of almond flour, and whether you hydrate with whole eggs or yolks alone — these are not stylistic choices. Each is a lever in the same gluten-control system.


Ingredients

The Base Formula (2.5× Production Scale — Variant 1: The Workhorse)

  • 625 g (4 ¾ cups) all-purpose flour
  • 125 g (1 cup) icing sugar, sifted
  • 3 g (1 tsp) Diamond Crystal kosher salt
  • 300 g (2 ¾ sticks) unsalted butter, cold or softened depending on method
  • 125 g (2 ½ large) whole egg, room temperature

This base formula — no almond flour, a moderate sugar-to-flour ratio of 20%, and a fat-to-flour ratio of 48% — is the maximum-strength option. It produces a firm, workable shell with the tensile strength to hold heavy fillings like ganache and dense frangipane, and to withstand the inverted muffin pan method without tearing.

Reading the table: Start with the Base Formula. Swap out only the ingredients that have an entry in the selected variant’s row. Variant 6 is a modifier, not a standalone formula — apply it to any other variant by substituting yolks for whole eggs at approximately 80% by weight and adding 15 g cream to restore workability. For sweet applications of Variant 6, add ½ tsp vanilla paste.


Mise en Place (Action Checklist)

  • Scale and group: Weigh all ingredients and group them by component before mixing begins.
  • For the Sanding Method: Cut butter into 1 cm cubes and return to the refrigerator. Butter must remain cold enough that it does not smear when pressed — firm, not waxy.
  • For the Creaming Method: Remove butter from the refrigerator 30–45 minutes before mixing. It should yield to thumb pressure without being greasy or shiny.
  • Sift the dry goods: Pass the icing sugar (and almond flour, if using) through a fine-mesh sieve to eliminate lumps.
  • Temper the eggs: Bring whole eggs or yolks to room temperature.
  • Prepare the pans: Line two half-sheet pans with perforated silicone mats or parchment paper. If using tart rings, arrange them on the lined pans. If using an inverted muffin pan, have it lightly greased and ready on the bench.
  • Preheat oven: 325°F/160°C for the Slow Bake or 350°F/175°C for the Rapid Bake — see Baking Specifications in Chef’s Notes.

Method

Phase 1: Method Selection.

Three methods arrive at the same product — a hydrated, rested dough ready to roll. Choose one based on the variant and your equipment. After Phase 1, the recipe is unified for all variants.

Method A: Sanding (Food Processor) Use for Variants 1, 3, 4, 7 — or any variant where maximum fat encapsulation is the goal.

Combine the flour, icing sugar, almond flour (if using), and salt in the bowl of a food processor. Pulse twice to distribute. Scatter the cold butter cubes over the dry mixture and pulse in 2-second bursts — eight to ten pulses — until the mixture resembles coarse, damp sand with no visible butter chunks larger than a lentil. With the machine running, add the eggs (or yolks and cream, for Variant 6) in a thin, steady stream and process just until the dough begins to clump and pull away from the sides of the bowl, about 15–20 seconds. Stop the moment it coheres.

Sensory Cue: The dough should look shaggy and slightly crumbly when you open the lid. When you press a handful against your palm, it should hold together cleanly without cracking.

For Variant 7 (Peanut Butter Shell): Add the fat in two stages. First sand the 185 g cold butter into the dry mix to coarse, damp sand. Then add the 160 g natural peanut butter all at once and pulse 5–6 short bursts until it disappears into the sand. Stream in the combined egg and cream last and process only until the dough clumps. After the minimum 2-hour chill (overnight preferred), roll loosely between lightly floured parchment to rough thickness, then press into each ring to conform — do not attempt a precision 3 mm roll-out. Press the base flat with a thumb, work the walls upward with your fingertips, and use a flat-bottomed glass to even the base. Patch tears by pressing excess dough over the gap. Freeze 20 minutes before baking. After removing weights at the 20-minute mark, brush the interior of each shell with a thin, even coat of egg white — this is standard for all V7 shells and is not optional; it reinforces the structure and prevents brittleness.

Method B: Creaming (Stand Mixer) Use for Variant 2 — or any variant where aeration and a tender snap are the priority.

Fit the stand mixer with the paddle attachment. Combine the softened butter and sifted icing sugar and mix on low to incorporate, then increase to medium. Beat for 2–3 minutes until the mixture is pale, noticeably lighter in color, and slightly increased in volume. Add vanilla paste, almond flour, and salt and mix on low until absorbed. With the mixer running on low, add the eggs in a slow, steady stream, pausing after each third to let the emulsion re-stabilize. Once the mixture is smooth and glossy — it should resemble thick mayonnaise — add the flour all at once and mix on the lowest speed, using on/off pulses, just until white streaks disappear. This takes no more than 20–30 seconds of actual mixing.

Sensory Cue: The finished dough should gather around the paddle and release cleanly from the bowl sides with no dry flour visible. It will be soft — too soft to roll immediately.

Method C: Hand Sablage (Fraisage) Use for Variant 4 — or when no food processor or stand mixer is available.

Sift the dry ingredients together onto a cold, clean work surface — marble is ideal; steel or granite also works. Scatter the cold butter cubes across the dry mound. Using the heel of your palm, press each butter cube into the flour with a quick, forward smearing motion. Work quickly; the goal is to create thin, translucent sheets of butter through the flour without your body heat melting it. When all butter is incorporated and the mixture looks like damp sand, make a well in the center. Pour in the eggs or yolk mixture. Draw the walls of the well inward using a bench scraper, cutting rather than kneading, until the dough just comes together.

Sensory Cue: The mixture should still look slightly rough and uneven when you stop. Resist smoothing it further — that develops gluten.

By all three methods, the dough is ready when it:

  • Holds together when pressed but is not sticky or wet
  • Smells of butter without being greasy on the fingertips
  • Has no visible dry flour pockets

Phase 2: The First Rest.

Bring the dough together into a flat disk approximately 3 cm thick. For Sanding and Hand Sablage, this may require 4–5 brief folds on the bench — no more. For the Creaming method, turn the soft dough onto plastic wrap and use the wrap to press it into shape; it will be too soft to handle directly. Wrap tightly and refrigerate for a minimum of 1 hour. Overnight (8–12 hours) is preferred for Variants 2 and 4, which have higher fat loads and benefit from a longer hydration rest.

During the rest, two things happen simultaneously: gluten strands relax (eliminating elastic springback when rolled) and flour fully absorbs the available moisture (making the dough cohesive and manageable).


Phase 3: Rolling and Shaping.

Remove the dough from the refrigerator. If it resists the rolling pin immediately, let it rest at room temperature for 5 minutes — pliable but still cold. Roll between two sheets of baking parchment to a uniform 3 mm (approx. ⅛-inch) thickness. Use rolling guides or two 3 mm dowels on either side if precision is critical; consistent thickness is non-negotiable for uniform baking times across a production batch.

Remove the top sheet of parchment. Using a round cutter 1.5–2 cm larger than the opening of your rings or muffin humps, cut disks of dough. Work quickly and avoid re-rolling scraps more than once — each re-roll warms the dough and develops gluten.

Shaping Option 1: Standard Tart Rings (Recommended for professional finish) Center a disk over a tart ring sitting on the lined sheet pan. Press the dough down into the base angle first, using a small ball of excess dough as a buffer to avoid puncturing the shell with a fingernail. Work the dough against the vertical wall of the ring in short, upward presses, ensuring no air pockets form. Trim any overhang flush with the top of the ring by rolling a pin firmly across the top. Dock the base with a fork at 1 cm intervals.

Sensory Cue: The dough should sit flush against the ring wall with no visible gaps at the base angle — a consistent corner depth is the visual checkpoint for even baking.

Shaping Option 2: Inverted Muffin Pan (Best for uniform cups without pie weights) Invert a muffin pan with the humps facing upward. Drape each dough disk centered over an individual hump. Press lightly to conform the dough to the rounded shape, then fold and crimp the excess at the base to form a clean collar. No weights are needed — gravity keeps the dough against the pan surface. This is the most reliable method for perfectly symmetrical cups and is ideal for Variants 1 and 5.

Shaping Option 3: Braided Sides (Decorative — for competition and display work) Line a tart ring using Shaping Option 1. With leftover scraps, roll thin snakes of dough approximately 6 mm in diameter. Twist two snakes together into a braid and press the braid gently around the interior rim, adhering it to the existing wall. The braid bakes into a raised, ridged border. Reserve for display pieces — it adds handling time and slightly increases wall thickness at the rim.


Phase 4: The Frozen Empty Hold.

Freeze all shaped shells — on the pan, uncovered — for a minimum of 20 minutes before baking. Do not skip this step. Freezing sets the fat into a solid state, dramatically reducing shrinkage when the shells enter the oven. A frozen shell bakes into shape rather than melting into it.

For production: After the 20-minute freeze-set, wrap the pan airtight in plastic. Raw shaped shells hold for up to 1 month frozen. Bake directly from frozen — no thawing required.


Phase 5: The Blind Bake.

Standard blind bake (rings or traditional pans — all variants) Remove shells from the freezer and immediately line each one with baking parchment that has been crumpled and re-opened (crumpling makes the paper pliable enough to conform to the shell walls without cracking them). Fill with baking weights, dried beans, or raw rice, pressing the weight into the corners. Bake at 325°F/160°C for 15 minutes, until the exposed rim is dry and just beginning to color. Remove the weights and parchment. Return to the oven for a further 10–15 minutes until the base is golden and sounds hollow when tapped.

Inverted muffin pan (no blind bake required) Place the pan directly in the preheated oven. No weights needed. Bake at 325°F/160°C for 20–25 minutes until the cups are uniformly golden and feel firm at the base. The dough contracts slightly as it bakes, making removal from the humps effortless.

Sensory Cue at Doneness: The surface should be a uniform pale gold — deeper than blonde, lighter than amber. The base should sound hollow when tapped, and the interior should feel dry and set, not tacky.

Allow all shells to cool completely on the pan before removing. Warm shells are fragile and will crack during demolding.


Phase 6: Waterproofing.

For moist fillings — pastry cream, citrus curd, fruit compote — brush the interior of each warm (not hot) shell immediately after baking with melted cocoa butter or tempered white chocolate. Apply a thin, even coat with a pastry brush and allow to set at room temperature for 2–3 minutes. This creates a hydrophobic barrier that prevents the filling from softening the crust during service or hold.

For dry or fat-based fillings — ganache, frangipane, nut-based fillings — waterproofing is optional but recommended for any shell that will be pre-assembled and held longer than 4 hours before service.

Always use the Slow Bake for Variants 2 (Classic Pâte Sucrée), 3 (Shortbread Snap), and 4 (Pâte Sablée). Their elevated sugar loads make them highly susceptible to over-browning at 350°F/175°C.


Variant Selection Guide

  • Heavy filling (ganache, dense frangipane, custard): Variant 1 or Variant 5
  • Light, elegant filling (curd, pastry cream, mousse): Variant 2
  • Maximum crunch and moisture resistance for display or competition: Variant 3
  • Melt-in-the-mouth for immediate plated service: Variant 4 — not suitable for advance-fill service beyond 2 hours
  • Deep-sided ring or tall tart structure: Variant 5
  • Richer color and tighter crumb on any variant: apply Variant 6 — substitute yolks for whole eggs at 80% by weight and add 15 g cream
  • PB-forward shell for ganache, caramel cream, banana pastry cream, or salted honey custard: Variant 7

Storage Protocol

  • Raw shaped shells, frozen and unbaked: wrap airtight after the 20-minute freeze-set; hold up to 1 month; bake directly from frozen, adding 3–5 minutes to total bake time.
  • Baked empty shells, room temperature: airtight container up to 3 days; keep away from humidity.
  • Baked empty shells, frozen: wrap individually in plastic, then bag; hold up to 2 weeks.
  • Service recovery: re-crisp at 300°F/150°C for 3 minutes before filling to restore any crunch lost to ambient humidity.

Perforated Equipment Advantage

Perforated tart rings and silicone mats are production tools, not luxury items. The perforations allow steam to escape from the base during baking rather than condensing and softening the interior. Shells baked on perforated surfaces brown faster on the bottom, require less blind bake time, and exit the oven with a drier crumb than those on solid parchment. If perforated equipment is not available, dock the base more aggressively.


The Patching Rule

When the dough tears during lining — and it will, especially with Variant 4 — press excess raw dough firmly over the gap and smooth with a damp fingertip. The patch fuses seamlessly in the oven. This is a production technique, not a workaround.


Scaling Note

All seven variant formulas scale linearly — doubling the formula doubles the yield with no ratio adjustments. However, mixing time in the Creaming Method does not scale with batch size. A double batch will require 1–2 additional minutes of creaming to achieve the same aeration as a single batch. Rest times and bake times are governed by thickness (held constant at 3 mm) and oven temperature — do not increase them when scaling up.

  • Sablage (Sanding Method): The process of working cold fat into flour until the mixture resembles sand; fat coats individual flour particles and inhibits gluten formation.
  • Fraisage: A hand-mixing technique in which butter is smeared into flour using the heel of the palm in short, forward strokes, creating thin butter sheets through the dough rather than discrete chunks.
  • Creaming Method: A mixing technique in which softened fat and sugar are beaten together into a homogenized emulsion before other ingredients are added; produces a more aerated, tender result than sanding.
  • Gluten: The protein network formed when wheat flour proteins hydrate and are mechanically worked; responsible for elasticity and chew. In tart dough, gluten development is minimized to keep the crust tender and prevent shrinkage.

  • Docking: Piercing the base of a raw pastry shell at regular intervals to allow steam to escape during baking, preventing the base from lifting or puffing.
  • Frozen Empty Workflow: The production protocol of freezing shaped, unbaked shells before baking; the rapid chilling sets the fat and reduces oven shrinkage.
  • Waterproofing: Coating the baked shell interior with melted cocoa butter or white chocolate to create a hydrophobic barrier that resists moisture transfer from wet fillings.
  • Plasticity (butter): The state in which fat is solid enough to hold its shape but yields under pressure; the correct state for the Creaming Method.

  • Pâte Foncée: Literally “lined pastry”; a firmer, less sweet tart dough formulated with a small amount of cream alongside the egg to increase gluten elasticity for lining tall, deep-sided molds.
  • Pâte Sablée: Literally “sandy pastry”; a tart dough with a high fat-to-flour ratio and yolks as the sole hydration source, producing an extremely tender, crumbly texture that dissolves on the palate.
