Crème Chantilly (Whipped Cream)

Headnote
Crème Chantilly is heavy cream that has been aerated and sweetened. Its success depends entirely on “Cold Chain Management”—keeping the fat in a solid state so it can form a rigid lattice around air bubbles. Teaching Idea: The Fat Lattice. Whipping cream causes the protective membranes around fat globules to partially break, allowing the fat to “stick” together into a structural network. If the cream is warm, the fat is liquid and cannot form this lattice, resulting in a flat, greasy soup rather than a foam.
Ingredients
The Standard Chantilly
- 480 g (2 cups) heavy cream, minimum 36% fat, very cold
- 50 g (¼ cup) powdered sugar
- 5 ml (1 tsp) vanilla extract or vanilla bean paste
Optional Stabilizers
- Xanthan Stabilizer: 0.5 g (⅛ tsp) xanthan gum (mixed with the sugar).
- Gelatin Reinforcement: 2 g (1 sheet) Gold-strength gelatin, melted into 15 ml of warm cream.
- Mascarpone Enrichment: 60 g (¼ cup) cold mascarpone.
Mise en Place (Action Checklist)
- Deep Chill: Place the mixing bowl and whisk attachment in the freezer for 10 minutes prior to use.
- Check the Percentage: Ensure your heavy cream is between 36% and 40% milkfat; “light” creams lack the fat density to hold air.
- Sift the Sugar: Sift powdered sugar to remove any cornstarch lumps that may interfere with the texture.
- Hydrate Stabilizers: If using gelatin, bloom the sheet in ice water for at least 5 minutes.

The Cold Start: Pour the cold heavy cream, sugar, and vanilla into the chilled mixing bowl.

Slow Aeration: Start the mixer on medium-low speed.
Why: A slower start builds a smaller, more uniform bubble structure. This “fine crumb” makes the final whipped cream significantly more stable than cream whipped quickly on high speed.

Incorporate Stabilizers: If using the Gelatin or Xanthan stabilizers, add them once the cream begins to show “soft trails” (faint lines from the whisk that quickly disappear).

Whisk to Peak: Increase the speed to medium-high.
Sensory Cue: The cream will shift from a liquid to a matte, pillowy solid. The whisk will leave sharp, distinct tracks.

Test the Set: Stop the mixer when you reach Medium-Stiff Peaks (the peak holds its shape but the very tip softly curls) if folding into a custard, or Stiff Peaks (the peak stands perfectly straight) for piping.
Chef’s Notes
- Over-whipping Fix: If the cream looks grainy or “broken” (approaching butter), add 1–2 tablespoons of fresh, liquid cold cream and fold it in gently by hand with a spatula to smooth the emulsion.
- The “Open Life”: Stabilized Chantilly (using xanthan or gelatin) can be piped onto a cake and will hold its sharp edges for 24–48 hours without weeping.
