Headnote
These are not the dry, crumbly cake pops of a box-mix operation. The base is a true egg-foam cake — génoise-adjacent, built on a ribbon-stage whip that traps enough air to keep the final dough tender, not dense. Crumbled, married to ground toasted walnuts, and bound with a condensed milk buttercream, the result is a dough that holds a ball without packing into a compact mass. The compound coating is deliberately not tempered chocolate — a small addition of refined coconut oil keeps the coat fluid on dipping, sets quickly, and prevents the cracking that plagues un-stabilized pure chocolate coatings. Teaching Idea: Compound Coating vs. Tempered Chocolate. Tempered chocolate relies on the precise crystalline structure of cocoa butter (Form V crystals) to contract and snap cleanly. Compound coating bypasses this entirely by replacing a portion of cocoa butter with a stable fat — here, refined coconut oil — that sets firm at room temperature without demanding thermal cycling. The result is a forgiving, crack-resistant shell that adheres cleanly to cold fillings.
Ingredients
The Cake
- 4 large eggs (approximately 200 g), room temperature
- 170 g (¾ cup + 2 tbsp) granulated sugar
- 80 g (⅔ cup) all-purpose flour
- 45 g (½ cup) Dutch-process cocoa powder
- 3 g (¾ tsp) baking powder
- 1 g (¼ tsp) Diamond Crystal kosher salt
- 80 g (¾ cup) walnuts
The Condensed Milk Buttercream
- 180 g (¾ cup + 2 tbsp / 1½ sticks) unsalted butter, room temperature
- 180 g (½ cup + 2 tbsp) sweetened condensed milk
The Compound Coating
- 100 g (3½ oz) milk chocolate, chopped
- 100 g (3½ oz) dark chocolate (60–65% cacao), chopped
- 20 g (1½ tbsp) refined coconut oil
For Finishing (Optional)
- Fleur de sel, for finishing
Mise en Place
- Preheat oven to 338°F/170°C; position rack in the center.
- Line a 9×13-inch (23×33 cm) baking pan with parchment paper and spray lightly with nonstick spray.
- Sift together the flour, cocoa powder, baking powder, and salt into a bowl. Set aside.
- Spread the walnuts on a small rimmed sheet pan; set aside for toasting during bake (toast separately — see Method, Phase 3).
- Pull butter for the buttercream from the refrigerator at least 1 hour before building the cream — it must be genuinely soft, not merely cool.
- Prepare the work surface for rolling: a parchment-lined sheet pan for holding the formed pops, and cake pop sticks.
- Set a heatproof bowl and a small saucepan of water for the double boiler coating stage.
- Prepare a tall narrow glass for dipping (a short drinking glass, approximately 7 cm diameter, works well).
Method
Phase 1 — Build the Egg Foam
In the bowl of a stand mixer fitted with the whisk attachment, combine the eggs and granulated sugar. Begin on low speed for 30 seconds, then increase to high.
Whip at high speed for 8–10 minutes until the mixture has increased to 5–6× its original volume, is pale ivory, and falls from the whisk in a thick, slow-moving ribbon that holds its shape on the surface for 3–4 seconds before dissolving.
Why: This is the ribbon stage — the foam’s air cells are the sole leavening and structural network for the cake. Unlike a creamed cake with chemical leavening doing most of the work, here the air-to-liquid ratio of the foam determines final crumb density. Under-whipping produces a flat, dense cake that crumbles dry rather than holding structure when formed.
Sensory Cue: The mixture should be the color of pale butter, not yellow. If you tilt the bowl and the foam slides as a slow mass rather than sloshing as liquid, it is ready.
Phase 2 — Fold and Bake
Remove the bowl from the mixer. Sift the dry ingredient mixture over the egg foam in three additions, folding with a wide silicone spatula after each addition using large, deliberate J-strokes from the bottom of the bowl. Work quickly — no more than 12–15 folds total across all three additions.
Critical: The fold is complete when no dry streaks remain. Stop immediately. Over-folding deflates the foam and produces a dense cake that will not hold structure in the final dough.
Pour the batter into the prepared pan and spread gently to the edges. Bake at 338°F/170°C for 30–35 minutes.
Sensory Cue: The cake is done when the edges have pulled slightly from the parchment, the surface springs back when pressed lightly in the center, and a skewer inserted at the center comes out with only a few moist crumbs — not wet batter.
Remove from the oven. Cool in the pan on a wire rack for 15 minutes, then turn out and cool completely on the rack.
Phase 3 — Toast the Walnuts
While the cake bakes, spread the walnuts on a small sheet pan and place in the oven for the final 8–10 minutes of the cake’s bake time. They are ready when fragrant and the skins begin to crackle.
Remove and cool for 5 minutes. Transfer to a food processor and pulse in short bursts until the walnuts reach a coarse sand texture — visible pieces no larger than 3 mm. Do not over-process into a paste; the oils will release and make the final dough greasy.
Phase 4 — Build the Condensed Milk Buttercream
In the bowl of a stand mixer fitted with the whisk attachment, whip the room-temperature butter on medium-high speed for 3–4 minutes until very pale and aerated — the butter should lighten noticeably in color and increase slightly in volume.
With the mixer running on medium, add the sweetened condensed milk in a slow, steady stream. Once all the milk is incorporated, increase to medium-high and whip for an additional 2–3 minutes until the buttercream is thick, glossy, and holds soft peaks.
Sensory Cue: The finished cream should be spreadable but not loose — it should mound when spooned and hold its shape without slumping. If it appears curdled or soupy, the butter was too cold; set the bowl briefly over a warm water bath and continue whipping.
Phase 5 — Build the Dough and Form the Pops
Crumble the cooled cake into a large bowl, breaking it into pieces no larger than a small grape. Add the ground toasted walnuts and toss to combine.
Add the condensed milk buttercream in three additions, folding with a spatula between each. The target consistency is a dough that holds a ball when squeezed without crumbling or sticking aggressively to your hands — similar to stiff marzipan. You may not need all the buttercream.
Portion the dough using a 30 g (1 oz) ice cream scoop or weigh on a digital scale. Roll each portion between your palms into a smooth ball.
Insert a cake pop stick into each ball, pushing it approximately halfway through. Place on the parchment-lined sheet pan. Refrigerate for 20–30 minutes until the balls are firm.
Why: Chilling the formed pops before dipping is not optional — warm dough will soften and slip off the stick when submerged in warm chocolate.
Phase 6 — Coat
Combine the chopped milk chocolate, dark chocolate, and refined coconut oil in a heatproof bowl set over a saucepan of barely simmering water (bain-marie). The water should not touch the bowl. Stir gently and continuously until fully melted and smooth — approximately 4–5 minutes.
Remove from heat and transfer to the tall narrow glass, which makes full submersion possible. The coating should be fluid and glossy. Allow to cool slightly — approximately 3–4 minutes at room temperature — until it coats the back of a spoon in a layer approximately 2 mm thick.
Remove the pops from the refrigerator. Working one at a time, submerge each ball fully into the chocolate, then slowly rotate and lift. Hold the pop above the glass and rotate slowly until the chocolate begins to set — 20–25 seconds. The coating should transition from wet-glossy to matte-tacky.
Optional: Before the coating fully sets, apply a few flakes of fleur de sel to the top of each pop.
Set the pop upright in a block of foam or a dedicated stand. Allow to set fully at room temperature for 10–15 minutes.
Once the coating is firm, remove the stick by twisting and pulling gently. Cover the small hole with a drop of warm chocolate applied with a toothpick. Allow to re-set.
Why: The coconut oil in the coating serves two functions: it keeps the chocolate fluid enough for clean submersion without requiring constant reheating, and it prevents the coating from contracting too sharply as it cools — which is the mechanism behind cracking in pure chocolate coatings applied to cold centers.
Variations
Pecan Variation
Substitute toasted pecans for the walnuts at a 1:1 ratio. Pecans have a lower tannin content and a sweeter, butterier flavor that leans the final pop toward a praline profile. The texture is nearly identical after grinding; the flavor distinction is pronounced.
Fleur de Sel Finish (Formal Presentation)
Apply fleur de sel immediately after coating each pop, while the chocolate is still in the matte-tacky stage — the crystals adhere without sinking. This upgrade is strongly recommended for service situations; the salt contrast against the compound coating’s sweetness is one of the clearest improvements a single ingredient can deliver.
Chef’s Notes
- Buttercream quantity: The recipe produces slightly more buttercream than you may need. Add it incrementally — the target dough consistency is the guide, not the full amount.
- Yield window: At 30 g per ball, expect 18–20 pops. For slightly larger pops (35 g), expect 16–17. The coating quantity remains sufficient for either yield.
- Scaling: The cake and walnut components scale linearly. The buttercream scales linearly. The coating scales linearly. If scaling up to a double batch, coat in two separate dipping sessions to prevent the chocolate from cooling and thickening before all pops are coated.
- Storage: Finished pops hold at room temperature for up to 2 days in a sealed container. Refrigerate for up to 5 days — bring to room temperature for 10 minutes before serving, as cold compound coating is firm and the contrast with a cold interior removes textural interest.
- Cocoa type: Dutch-process cocoa is specified for its mellowed, non-acidic profile. Natural cocoa will produce a slightly more bitter, sharper chocolate note — functional, but the flavor profile shifts. Do not substitute in proportion unless the recipe is adjusted.
- Refined vs. unrefined coconut oil: Use refined. Unrefined (virgin) coconut oil carries a distinct coconut flavor that will register in a thin chocolate coating. Refined is neutral.
Glossary
- Ribbon stage: The point in egg foam whipping at which the mixture is sufficiently aerated to fall from the whisk in a slow, continuous, tape-like ribbon that holds its shape briefly on the surface before dissolving. The visual benchmark for foam readiness in génoise and sponge cakes.
- Génoise: A French sponge cake leavened entirely by an egg foam (whole eggs whipped with sugar), with no separate creaming of fat. Fat is typically folded in at the end; this recipe omits added fat, relying on the eggs’ own lipid content.
- Compound coating: A chocolate-flavored coating in which some or all cocoa butter is replaced with a stable vegetable fat. Does not require tempering and produces a crack-resistant shell on cold centers.
- Tempering: The process of cycling chocolate through specific temperatures to encourage the formation of Form V cocoa butter crystals, producing a glossy, snapping coating that contracts cleanly on cooling.
- Bain-marie: A hot water bath. Used here as a gentle, indirect heat source for melting chocolate without exposing it to direct flame, which can cause scorching and seizing.
- Dutch-process cocoa: Cocoa powder treated with an alkalizing agent to neutralize natural acidity, producing a darker color and a smoother, less sharp chocolate flavor. Preferred in recipes where the fat-acid balance is important (e.g., egg foam cakes, where natural cocoa’s acidity can partially weaken the foam structure).
- Fleur de sel: Hand-harvested French sea salt with large, irregular crystals used as a finishing element. Applied after a coating sets to the matte-tacky stage so crystals adhere without sinking.
- Condensed milk buttercream: A style of buttercream in which sweetened condensed milk replaces powdered sugar as the sweetener and emulsifier. The result is silkier and less prone to graininess than a standard American buttercream.
